| Food Handler | 40 | 30 | 10 |
Is 75% Hard to Achieve?
75% is very achievable with proper preparation. The questions are scenario-based, so understanding the why behind food safety rules is more important than memorizing facts. The most commonly missed topics are:
- Time-temperature control — knowing exact cooking temperatures for different foods (165F for poultry, 155F for ground meat, etc.)
- Cooling procedures — the two-stage cooling process (135F to 70F in 2 hours, then 70F to 41F in 4 more hours)
- Cross-contamination scenarios — identifying contamination risks in realistic kitchen situations
- HACCP principles — applying the 7 principles to food safety management
What Happens If You Fail?
If you score below 75%, you can retake the exam:
- No mandatory waiting period — you can retake as soon as you can schedule it
- Retake fee: $36-$75 per attempt (full exam fee)
- No limit on attempts — you can retake as many times as needed
- Study more first — retaking without additional preparation usually leads to the same result
Tips to Score Above 75%
- Take practice tests until you consistently score 85%+
- Focus on the Flow of Food — it's the largest section (~30% of the exam)
- Memorize key temperatures — 41F, 135F, 155F, 165F, and the danger zone
- Understand scenarios — the exam tests application, not just recall
- Answer every question — there's no penalty for guessing
